Chip Tate, founder and master distiller at Balcones, wants to put Texas on the map for whisky. In the old welding shop in Waco, Texas, that Balcones transformed into a craft distillery, they’re working to not only make whisky in Texas, but to begin a Texas whisky tradition. They hand built most of their distilling equipment, which allowed them to make it the exact way they want it for their spirits. They used this freedom to distill the first Texas whisky, along with the first ever whisky made with blue corn, the True Blue, with more drams following soon after. Their small batch expressions have won over 40 awards.
